Once hot, add the chicken, in batches, and fry until crispy, golden, and brown, about 8-10 minutes. The other option is to simply deep fry the chicken. If you want to go that route, heat the oil to around 350-375 degrees Fahrenheit and fry the chicken for about 6-8 minutes. It will begin to float when fully cooked and done. Again, do this step in batches to prevent the oil temperature from dropping too much resulting in less crispy and potentially even soggy chicken.



Once the chicken is cooked, using either method, transfer it to a paper towel-lined plate to drain and set aside for now. Moving on, drain any excess oil from the pan or wok and toss in the jalapeno slices. Sauté them for 1-2 minutes before adding the minced garlic. Let these two ingredients cook until aromatic, about 1-2 additional minutes.



When your kitchen begins to smell of delicious garlic with a hint of spice, add the stir fry sauce we made earlier and stir while it heats up and slowly begins to thicken.



Return the fried chicken to the pan with the sauce and sauté for an additional 3 to 4 minutes to reheat the chicken and further reduce the sauce to a sticky, delicious coating.
