Bacon Wrapped Jalapeno Chicken Bites

Trying to figure out that game changing barbecue/get together snack to wow your friends and have them asking for more? Look no further than these Bacon Wrapped Jalapeno Chicken Bites! These can be prepared ahead of time and frozen before cooking or made day of your party and will be sure to light up everyone's taste buds. They are the perfect gameday snack to munch on or just the appetizer you have been trying to figure out for your next barbecue! Just a few ingredients and a little bit of preparation and you will be enjoying these little flavor bombs before you know it! Stick around and check it out....Let's get cooking!



As you likely have guessed, this appetizer recipe is all about preparation for the most part. Yeah it will take some time and patience, along with some greasy, raw chicken and jalapeno covered hands, but the effort will be worth it, trust me! And before I forget, now would be a good time to drop some skewers into some water to start soaking to prevent future issues. Begin by prepping everything and setting up a assembly line of sorts. Grab some boneless, skinless chicken thighs and break them down into bite-sized pieces. Can you use chicken breasts, you may be asking? Well, yeah, but we all know how terrible of an idea that would be unless you prefer dry, Sahara Desert-like food and probably should just go ahead and seek a different website for your recipe ideas! Now for all my sane cooks out there, put your chicken bites into a bowl and let's move on. Thin slice some jalapenos leaving all the seeds and veins intact. These are gonna be cooked with enough sweetness later on that you NEED that bit of extra heat for a complimentary balance. Now onto the pièce de ré·sis·tance AKA the bacon! I found that a 1/3rd of a slice worked fine for me as my chicken pieces were fairly small, but you may have to use a half slice if your lazy on the chicken chopping prep or just like a little extra bacon goodness...you do you! Line everything up and get ready to throw a wrap and skewer party!



Alright, now comes the tedious part of this recipe. Grab a piece of chicken, a jalapeno slice, and wrap them with a piece of bacon. Slide that bite onto a long skewer, the ones I previously mentioned that should be plenty soaked by now, and repeat this process till you regret ever being born, or you run out of ingredients...whichever comes first! Yes you can do these on individual toothpicks, but since we are going to be turning them over halfway through the cooking process I think long skewers just make life a bit easier.



Four score and seven years later, when you are finally done with the prep, line up your skewers and generously spread some brown sugar over them, on all sides. This is honestly the only seasoning you need to do for this recipe. The bacon is already salty and smoky, the jalapenos bring some heat, and the chicken doesn't really need anything since it will get basted in all the other flavors during the cooking process. You can throw your favorite BBQ rub on the chicken if you wish, or on the outside with the brown sugar, but that's your call!



Pop these bad boys into the oven at 350 degrees Fahrenheit for 45 minutes! Don't completely forget about them, though, and be sure to give them a turn or flip halfway through. I highly suggest having them on a raised cookie rack or grill grate of sorts to promote dry cooking on all sides. That being said, these can easily be cooked on the grill or even smoked if you wish. I'm just providing the most simple, dumb-downed version that any person with the most basic kitchen amenities can knock out. Every oven is a bit different so just start checking them after 35 minutes to see if the bacon has crisped up. The chicken should be plenty cooked, but since we are using thighs you want to aim for 175 degrees internal temperature, if you feel the need to double check.



Sheeeew Weeeeee! That's it, folks! Slide these Bacon Wrapped Jalapeno Chicken Bites off the skewers and into your salivating mouth! You can pile them up on a tray or be a snazzy host and pop a toothpick into each one, just get these to your soon-to-be worshippers as quickly as possible and let the glutton fest commence. Thanks to the aromas that will be drifting from the oven, you probably won't even make it out of the kitchen before the cult comes in to devour these! Keep them as is or drizzle on your favorite barbecue sauce...either way these things are a bite of Heaven! Try them out and let me know what you think.
