Looking for a light, refreshing new take on everyday grilled chicken recipes to change things up and add a little spice to life? Well I have the perfect recipe for you! This modern take on the classic Indian Chicken Tikka will have your entire family drooling at first sight and coming back for seconds. Marinated in Greek yogurt with traditional herbs and spices, these Chicken Tikka Tenders can be prepared as an appetizer for your next cook out or steal the show as the main dish of next week's family dinner! Simple to prepare and even more delicious to eat, this recipe is sure to become a family favorite in no time. Sit back and relax as I walk you through this one, because you're in for one hell of a ride.......so let's get cooking!
This Chicken Tikka Tenders recipe is all about the marinade, so begin by combining some Greek yogurt with all the tasty spices. Garlic, ginger, turmeric, cumin, Garam Masala, cayenne, paprika, and lemon juice should be added to plain Greek yogurt and mixed thoroughly to ensure even distribution throughout.
Pretty simple so far, eh? Now all we need to do is pour this marinade over some chicken and voila......you are on your way to Flavortown! I happened to have some chicken tenderloins on hand so I went with them, but feel free to use chicken breasts or my actual all time favorite, chicken thighs. Typically Chicken Tikka is served in kabob form so chop your breast/thighs into bite-sized pieces to skewer after marinating or leave them whole.....you can do whatever floats your boat on this one. Place your chicken into a ziplock bag or sealable container and add the yogurt marinade. Be sure to get the marinade distributed all over every piece to make sure they are well coated. Seal it up and place it in the fridge to work some magic for at least 8 hours, but overnight is preferable!
After the chicken has had ample time to marinate and soak up all those delicious flavors, dump everything into a colander to strain off the excess marinade. You don't wont to leave too much extra marinade yogurt sauce on the chicken or it will tend to burn during the grilling process, so just give each piece a little shake before tossing it on the grill. As previously mentioned, if you chose to chop your breast or thighs into pieces now would be the time to get them onto a skewer to make cooking a little more simple. Normally Chicken Tikka would be cooked in a tandoor, but since no one has one of those at home we will be grilling it today. I chose to use my indoor grill this time, but any outdoor grill will work as well. Grill the chicken over medium heat for 7-9 minutes turning once until the internal temperature reaches 165 degrees. As always, any white meat will tend dry out if you go much past 165, but the yogurt marinade greatly helps keep things moist this time around as long as you keep your temperature in the general ball park.
And just like that you have made some tasty Chicken Tikka Tenders! These are great served up as an appetizer, but no one says you can't make these the main dinner entre. You can pair the chicken with a tikka masala sauce, or even chop it up and add it to a curry of choice. Hell, make a batch of some delicious saffron jasmine rice and serve it up hot as it is, the possibilities are limitless for this tasty protein! Either way you choose to serve it, try it out and let me know what you and your family thought...just keep cooking!
