Crispy Smashed Baby Potatoes

Let's face it. We are all bored with baked potatoes and mashed potatoes when it comes to potato side dishes and long for something new. Sure, fries are always an option, but every once in a while, there is an occasion that calls for something a bit fancier and more refined. Today's recipe, Crispy Smashed Baby Potatoes, combines a couple of cooking techniques to produce a soft potato with a crispy exterior paired with a delicious dill-garlic sauce! While they are still very simple and easy to make, these potatoes can elevate any meal to fill that special occasion or holiday side dish few will be able to resist! Place the potatoes in a pot and cover with water. Season the water with some salt and bring it up to a boil. Boil the potatoes for 12 to 15 minutes, until fork tender, and drain.



In a small mixing bowl, combine 3 tablespoons of olive oil with some freshly minced garlic and dill to create the serving sauce. Season with a pinch of salt and pepper and set this aside for now. Preheat the oven to 425 degrees Fahrenheit.



Arrange the boiled potatoes on a parchment lined baking sheet and use a glass or cup to gently smash them flat. The trick is to smash them flat without making them completely fall apart. Once smashed, drizzle each potato with the remaining olive oil and bake for 15 minutes, until the exterior is crispy.



After 15 minutes or so, remove the potatoes from the oven and apply a bit of the dill-garlic sauce we made earlier to each potato. You can also hold off on this and serve them as is at the table with the sauce on the side, but I say if you are the one making the dish then you get to decide whether people get a choice or not. I made the sauce so people will be eating the damn sauce, like it or not! Besides, who doesn't love a potato with fresh garlic and dill flavors making it a million times better?



And just like that you have made some absolutely baller Crispy Smashed Baby Potatoes that will elevate any meal to the next level! These potatoes have a nice crispy bite surrounding a soft interior making them somewhat like a french fry but in whole baby potato form. The dill-garlic sauce is fresh and vibrant and really flavors these potatoes so well that they can almost be enjoyed as a meal on their own. I mean, some vegetarian might do that, but for the rest of us carnivores, they pair with just about any meat you might prepare. Grill a steak, bake some chicken, or roast some pork in combination with these Crispy Smashed Baby Potatoes and you got a killer meal! Hell, they are so simple and easy to make I think they would also work well for large holiday meal like Thanksgiving or Christmas. You can actually boil the potatoes 1 to 2 days ahead of time and just smash and bake on the day of your feast!
