Easy Caprese Salad

Need a quick and easy side salad or appetizer for your next get together or party? Look no further than this simple spinoff of a traditional caprese salad! You can wow your guests and friends with just a few ingredients and couple minutes of prep work without even breaking a sweat in the kitchen. Follow along and check it out for yourself. Trust me when I say you are definitely going to be adding this to your repertoire!



We will start by halving a couple cups worth of grape or cherry tomatoes.



Next, dice a regular sized English cucumber. Amounts are definitely up to you, but I say somewhere around a cup or so should do the trick.



Moving right along, eh? Finely dice about a 1/4-1/2 cup of red onion. This will be eaten raw so be sure to cater your tastes and palate accordingly.



This next step can't get much easier. Grab a container of mozarella pearls and pretend like you actually know what you are doing for once! These things come in 8 ounce portions so let's just keep it super simple and use that amount.



Since you are all All Stars at this point, I bet you can figure out the next step! No we don't need to prank call Aunt Sally and pretend we are a Greek restaurateur with an urgent order for some Galaktoboureko (say that seven times fast!). Well, it could be fun so while you go ahead and toss all these ingredients into a bowl, give her that call and have some fun with your free time thanks to this simple recipe! Now, drizzle in a couple tablespoons of olive oil, a tablespoon of balsamic vinegar, and a tablespoon or so of Italian seasoning. If you have fresh basil on hand, tear some leaves off and just rip them into this mix. Otherwise, basil paste or whatever "kinda" fresh version of basil you can find from a tube will do the trick to complete the flavor profile and look we are aiming to achieve. Stir everything together, but careful not to smash or ruin those lovely tomatoes. We are going to need instagram pics to show off this tasty treat and your newfound skills! Let it rest in the fridge for a few hours/overnight and serve it as an appetizer, or with some charcuterie, or even just as a side salad with your favorite meal. This light and refreshing easy caprese salad should become an instant favorite among your friends and family. Enjoy!


Pro tip, add in some fresh diced avocado to up the game! Just remember, it will begin to turn brown if not consumed within a day or so. A splash of lemon juice will help keep things looking delish!
