This Grilled Chipotle Shrimp is all about the marinade so begin by adding garlic cloves, chipotle peppers with adobo sauce, and some cilantro to a food processor and pulse until well minced and combined. Transfer that mixture to a bowl or ziplock bag and continue adding the remaining marinade ingredients: lemon juice, olive oil, paprika, salt, pepper, red pepper flakes, and cayenne pepper. Stir or mix all the ingredients together before adding the shrimp and continuing to mix until all the shrimp are evenly coated and covered in the marinade.
Place the bowl or bag of shrimp and marinade in the refrigerator for at least one hour, but up to 2-3 hours total to allow time for the marinade to soak in and flavor the shrimp. Remove the shrimp and drain off the excess marinade. Thread 5 or 6 shrimp onto each skewer that has been soaked in water to prevent burning. This process only takes a few minutes so go ahead and light your grill over Medium to Medium-High heat.
Once all your shrimp have been skewered, transfer them to the grill and cook for 2 minutes per side, totaling about 4 minutes.
After 4 minutes of grilling, remove the shrimp and serve as is on the skewers as an appetizer or remove the shrimp and serve with rice or noodles, however you wish. These spicy shrimp are full of flavor on their own or make a great addition to other dishes, such as a scampi or stir fry!
