KETO Egg Salad

Whether you grew up rich or poor, there is a good chance you have had an egg salad sandwich at some point in your life. A variety of egg salad recipes exist, but they all typically contain hard boiled eggs and mayonnaise. It is almost one of those recipes that is KETO from the start, but people tend to add extra ingredients to up the flavor profile since it is most often ate on bread as a sandwich. Today's recipe, KETO Egg Salad, is a simple, straight-forward but delicious egg salad meant to be enjoyed on its own as a main dish. It is full of protein and fats which makes hitting your daily macros simple and easy. There isn't much to explain about making this KETO Egg Salad so enjoy a true lazy man's recipe for once.....Let's Get Cooking!




Begin by placing the eggs in a pot and cover them with 1-2 inches of water. Turn the heat on to High and bring the water up to a full boil. Once boiling, turn the heat off and cover the pot for 10 minutes while the eggs cook in the hot water. After 10 minutes, transfer the eggs to a cold, ice water bath to stop the cooking process. Once chilled, peel the eggs and set aside for the recipe. You don't have to worry too much about them looking pretty since they will be chopped so feel free to speed through the peeling process. Pro Tip: eggs that are 2-3 weeks old will peel much easier than fresh eggs so try and use older eggs if possible.



Roughly chop the boiled eggs and place them in a large bowl. How rough or fine you chop the eggs will define the final egg salad texture so aim to chop each egg into 6 pieces or so for a standard bite.



Once the eggs are chopped, simply add the remaining ingredients to the bowl and mix thoroughly. Besides what is listed on the recipe card below, feel free to experiment with additional spices and seasonings. Curry powder, for example, adds an additional layer of flavor that will catch most people off guard, in a good way of course!
