Begin by placing the eggs in a pot and cover them with 1-2 inches of water. Turn the heat on to High and bring the water up to a full boil. Once boiling, turn the heat off and cover the pot for 10 minutes while the eggs cook in the hot water. After 10 minutes, transfer the eggs to a cold, ice water bath to stop the cooking process. Once chilled, peel the eggs and set aside for the recipe. You don't have to worry too much about them looking pretty since they will be chopped so feel free to speed through the peeling process. Pro Tip: eggs that are 2-3 weeks old will peel much easier than fresh eggs so try and use older eggs if possible.
Roughly chop the boiled eggs and place them in a large bowl. How rough or fine you chop the eggs will define the final egg salad texture so aim to chop each egg into 6 pieces or so for a standard bite.
