Korean Spicy Pork Bulgogi

Hello bulgogi fans! Today we are back and introducing a lesser known form, but equally if not more so tasty! We are talking about spicy pork, folks! This simple to follow recipe will cover the basics so get your taste buds ready to be blown away. While it is called spicy pork bulgogi, it is not really all that spicy, unless you happen to be one of those mid westerners that think yellow mustard is hot. Like most Korean recipes, we are basically just using the standard red pepper paste and spice to bring out a little heat and get those endorphins flowing so grab a beer and stick with me as I walk you through this very easy recipe. Let's get cooking!





There are several cuts of pork you can use for this recipe, but today I will be using the traditional pork shoulder. It has the best meat to fat ratio to keep the pork moist and juicy, yet retain all those wonderful marinade flavors we will be incorporating along the way. Now a pork shoulder obviously comes in a giant ball/hunk of meat form so I began by breaking it down into manageable slices and semi freezing them to help get those thin pieces we want for any bulgogi dish. Pork shoulder is best here, but feel free to use a pork loin or any cut really as long as you break it down into thin slices of bite sized meat. Now like all most amazing Korean dishes, we want to prepare the marinade. Check the recipe below for the ingredients and amounts, but get everything prepped and ready to mix in a large bowl.







Everyone still with me? So far so good, eh? Cover the mixture and allow everything to marinate at least 6 hours, but over night is best! When you are ready to start cooking, heat a large cast iron pan or grill up to medium high heat and throw in a little cooking oil. We actually want to try and get a little sear action going with those tasty burnt crispy bits adding to the overall flavor. Depending on how thick or thin you sliced your pork, cooking should only take about 10-12 minutes per batch. Be sure to cook in a few batches and avoid overcrowding the pan.






And voila! You should be ready to enjoy that wonderful spicy pork bulgogi! Serve over some rice or with lettuce cups.
