Lamb Kofta Kebabs with Greek Tzatziki Sauce

The first thing we want to make for these kebabs is the cool and refreshing tzatziki sauce. Begin by finely mincing or grating the cucumber. Be sure to use an English or Persian cucumber to reduce seeds and overall water. Place the grated cucumber in a kitchen towel, or wrap in several paper towels, and squeeze as much water out as possible. Let it drain in a colander while you continue making the rest of the sauce.


Next, combine the yogurt, garlic, olive oil, lemon juice, parsley, dill, and salt in a bowl. Mix well. Add the well-drained cucumber to the bowl and stir to combine. Cover and refrigerate for at least 2 hours, if not overnight, to further develop the flavors of the sauce. It's best to make it the night before, but a few hours in the fridge will work in a pinch.



Once the tzatziki sauce is ready, we can move on to making our kebabs. First, we will combine all the flavors and seasonings together. Grate or finely mince a small onion or half a larger one. It's really up to your personal preference, but I think onion and lamb are great partners so add as little or as much as you wish. Anyway, place the grated onion in a bowl and combine it with the minced garlic, chopped parsley and dill, cumin, and some salt/pepper.



Once your bowl of flavor is ready, add the ground lamb and use your hands to mix it evenly. You don't want to overwork the mixture, but be sure all the seasonings are well mixed throughout the lamb meat. Once mixed, cover the bowl and refrigerate the mixture for a couple hours, so those flavors can really penetrate throughout the ground lamb. Again, this can be done a day ahead with the tzatziki sauce for best results.




When you are ready to grill the kebabs, be sure to soak any wooden skewers at least 30 minutes or so ahead of time. Divide the lamb mixture into 8 equal portions and use your hands to form them into a log on each skewer. I ended up doubling the skewers, but you can also divide the mixture into 16 smaller portions and place two of them on a single skewer. I didn't feel like wasting that much time, though, especially when a serving size is 1 of 8, but you do you and make as many or few as you wish. Keep in mind we will be grilling these over a hot flame so make sure they are well formed and will stay together during the cooking process. Smaller ones may be slightly easier to handle so make one and try it out for your setup before committing to the full mixture in terms of size and number.



Give your grill grates a light spray or wipe of oil and simply place the skewers on to cook. The first side should take about 3 to 4 minutes, depending on your sizing. Flip and cook them for an additional 2 to 3 minutes for Medium Rare, 3 to 4 Minutes for Medium, and 4 to 5 minutes for Well Done.



When finished, remove the kebobs and let them rest a few minutes before serving. This will give all those internal juices time to redistribute back through the meat ensuring the kebobs are juicy and tasty as ever!
