Miso Glazed Pork Chops

Unless you happen to have some garlic confit already prepared in your refrigerator, which I highly suggest for future you, we will start by making this simple recipe ingredient game-changer! Place a couple handfuls of garlic cloves in a small oven-safe container and cover them with olive oil. Bake the garlic cloves for 2-3 hours at 200 degrees Fahrenheit. This will slowly transform the hard, pungent garlic into a soft, umami-packed delicious spread. You can store this mixture as is or puree it all together depending on how you plan to use it. I suggest leaving it as is since you can always puree it into a paste later on, yet still have access to the garlic infused oil and individual cloves in the meantime.



Now that this one extra special ingredient is out of the way we can move on to making the marinade for the pork chops. Simply combine about 15 or so of the confit garlic cloves with 4 tablespoons of the oil, some rice vinegar, mirin, and of course, some miso paste. For this particular recipe, I suggest using white miso, but feel free to experiment with red or a mix till you find your favorite flavor combination. Toss everything in a blender and pulse until well combined and smooth.



Spread the miso marinade all over your pork chops and let them hang out for 1 to 2 hours in the fridge. You don't want to let these sit overnight as they will become too salty, but anything up to 4 hours and you should be fine.



Heat your grill to Medium-High and toss on the pork chops. Cook them about 6 to 7 minutes per side until the internal temperature reaches 145 degrees Fahrenheit. Be careful to measure the temperature of the meat and not the bone itself!
