Pressure Cooker Rosemary and Garlic Cauliflower Puree

Low carb, KETO, and health conscience dieters are on the rise. While eating healthy is certainly better for our bodies, not all "healthy foods" taste that great. Fake meat this and that is theoretically going to change the food world at some point, but for now still tastes like cardboard and is full of fillers that make it just about as bad as that juicy ribeye you have been craving. For all the low carb/KETO dieters out there, it really takes some creativity and deep GOOGLE searches to find replacement vegetables or supplements to satisfy cravings and still maintain proper micros and macros. Everyone loves a good french fry or potato dish, but they are certainly high on carbs so cauliflower has been well used in its place, and for the most part, does a pretty good job in terms of texture and taste. Today's recipe, Pressure Cooker Rosemary and Garlic Cauliflower Puree, will make even the most die-hard mashed potato lover out there convert and still be happy! Like every other pressure cooker recipe, it's fast, easy, and very convenient for a standard weekday meal or even a holiday feast, such as Thanksgiving or Christmas! One of the great attributes of cauliflower is that it freezes well and is available year-round in the freezer section. Obviously, you can use a fresh head of cauliflower and break it down into florets, but I say take the easy road and just grab the frozen stuff. That being said, measure out the amount you will need and let it sit at room temperature for an hour or so to semi-thaw out. The main reason for this step is water content. If you cook it from fully frozen, there will likely be some extra ice crystals and water that will make your final product a bit too thin and runny. It doesn't have to be completely thawed or fully dry, but try to get as much extra moisture separated as possible. Using fresh cauliflower won't have this issue, but I think cheating with the frozen florets just makes more sense. In fact, I have found the frozen florets to actually be cheaper than a fresh head of cauliflower, depending on the time of year and where you live of course, so use whichever is more economical and convenient for you. Anyway, add your florets to your pressure cooker along with the chicken stock, salt, garlic, and fresh rosemary stems.



Attach the lid of your pressure cooker and set it to cook for 10 minutes. Once the time is up, manually release the pressure and carefully vent the steam. The chicken stock and natural water in the cauliflower itself is all the liquid we want. Once the pressure has been completely released, remove the lid and allow any remaining steam in the pressure cooker to vent away.



Grab the rosemary stems and give them a quick shake to release a handful of the leaves. It's up to you how much you want in the final product, but since it will all get pureed I say the more flavor the better! Discard the stems and any excess remaining leaves.



Use a spoon and stir everything together. The cauliflower should break down on its own and could be eaten as is in this rustic form, but pureeing it will make it look a little more appetizing and create a better mouth feel. Add some ghee, or butter, at this point so the heat of the cauliflower mash will melt it down.



Use a slotted spoon to transfer this mash to a blender. It's better to leave a little excess liquid behind and be able to add it back if needed. Once you puree the cauliflower, it will surprisingly soak up a lot of the excess liquids so don't fret too much if your batch looks a bit thin going into the blender. Pulse your blender until the mixture is smooth and creamy.
