Sous Vide Egg White Bites

While everyone enjoys a Starbucks egg white bite once in a while, paying those ridiculous prices does not settle well with anyone! They can be easily made at home using a sous vide water bath setup or even baked in a muffin tin. Today, I will show you how to make these delicious, breakfast on-the-go Sous Vide Egg White Bites at home for a fraction of the price. They are perfect for meal prepping or for a fun, whole family weekend breakfast meal! Sous vide is quickly becoming a popular cooking method so even if you don't have the equipment yet, stick around and see just how simple the process is and how convenient it can make your life and meal prep. I will even reveal a standard baking option if you give the sous vide process a chance....Let's get cooking!




The first step in creating these delicious Sous Vide Egg White bites is to set up your sous vide water bath and get it up to 167 degrees Fahrenheit. This should take just enough time for us to get everything prepped and ready to drop in. Now, for the ingredients themselves, we really only have a couple things to prep. Feel free to manually separate your whites from yolks using normal eggs, or join me on the lazy train this trip and use a carton of egg whites. It's totally okay to cheat with the prepackaged egg whites in this case. Anyway, I digress. Other than measuring out all the cheeses and whatnot, finely dice your red bell pepper and spend a minute slicing the green onions. Everything besides those two ingredients will get the royal blender treatment until smooth, so take a minute and carefully prep the bell pepper and onion as they are essentially the main texture components.



Set your bell pepper and green onion aside while you add everything else to your blender or food processor. Let that bad boy do its thing for a minute or so until everything is smooth and well blended. You can also use an immersion blender in a large mixing bowl if you don't have a regular blender or want to dirty up your food processor bowl.



Once your egg white and cheese mixture is smooth, add in the bell pepper and onion. This time, only give the mixture a few pulses to evenly spread the bell pepper and green onion throughout. If you are using a mixing bowl, just drop them in and give it a good stir for distribution.



Alright, now for the magic of sous vide cooking! Take your small canning jars and give them a good spray with some canola oil or other nonstick spray. Pour the mixture into each jar and fill them up about 3/4 full. From my experience making a few batches of this recipe, a half-pint jar filled to just under the screw lid ends up being about a final portion of 2-ish egg whites. Otherwise, just fill all your jars half full then go back and top them off a bit at a time till you use up all your mixture.....it is far from rocket science, eh?



Screw on the lids tightly and carefully place them into the sous vide bath using some canning tongs or something to ease them in. You definitely want to be careful not to splash yourself with 167 degree water...just sayin! Let the Egg White Bites cook for 90 minutes at 167 degrees Fahrenheit. Sous vide is just that simple...set and forget!



After 90 minutes, remove the jars with the canning tongs and let them cool a bit. After 15-20 minutes, they should be cool enough to grab with a towel and unscrew the lids. Yes, I realize they don't look 100% amazing yet so hold your horses just a minute. As with almost all sous vide cooking, we still need to do a final sear/torching step.



Using either a toothpick or offset icing spatula, etc etc, slide around the inside edge of the jars to loosen up the Egg White Bites. You should be able to flip them upside down onto a tray or plate and have them slide right out without much trouble. You did remember to spray the jars earlier, right? Now we have to do the final step, either torching or broiling in your oven for a couple minutes to crisp up the top and finish them off nicely. This step isn't absolutely necessary, but it does make them look nicer and a bit more appetizing for those Instagram photos! I just put a torch to mine till the top began to sizzle and brown a bit.



And that's all she wrote, folks! You can leave them in the jars to keep them easily available for those mornings you are rushing out of the house and need a to-go breakfast or move them into your normal meal prep containers. Does the sous vide cooking technique seem like something you might want to try?


As promised, if you are still against sous vide or just don't have the equipment, simply pour the mixture into muffin tins or equivalent bakeware and cook them at 360 degrees Fahrenheit for about 20-25 minutes until they start to brown. Yeah baking them is super easy, but they will end up a slightly firmer texture and a bit more on the dry side. You can always try them both ways and see which you prefer, eh?


Nonetheless, these Starbucks knockoff Egg White Bites are sure to put a smile on your face and a healthy meal in your belly without costing a small fortune. I made this recipe as a large batch since it caters more to meal preppers, but you can easily half everything and just make a couple servings for yourself. I do bet, however, once you have a few of these in your fridge ready to go everyday you will prancing around like a Real Housewife of whatever town you reside living the high life and giving zero shits! No matter if you choose to try sous vide or simply baking these, get in the kitchen and make delicious things.....Just Keep Cooking!
