Triple Sausage Breakfast Bake

Simple breakfast casseroles are great and all, but they seem to lack much texture which leaves us wanting more to eat. Aside from a few veggies, they are mostly just eggs, or even only egg whites, which is great for calorie control but also can lack the satiation we desire after a normal hearty breakfast. Today's recipe, Triple Sausage Breakfast Bake, combines the best standard egg casserole with three different sausages making it more filling and flavorful than one may imagine. It is still low carb/KETO-friendly and can be altered to fit most tastes depending on which sausages you choose to use....Let's Get Cooking!




Thankfully this simply breakfast casserole only has a few prep steps. Begin by dicing some onion and bell peppers into small, 1/2-inch square pieces. Remove the seeds from a couple jalapenos before finely dicing them. Depending on how you choose to cook your sausages, you can either slice them into bite-sized rings now and sauté them in a pan or leave them whole for the grill, as I will later show. There is no right or wrong way, but I think the grill imparts a little extra flavor that pan sautéing misses out on at times.



Once all your veggie prep is complete, turn your attention to the sausages. For this particular recipe, I chose to use Italian and Andouille sausages as well as beef brats. By all means, use whatever you have on hand that you think would pair well with eggs. Have fun and change out the sausages each week so you don't get overly bored with this meal prep option. Whatever you use, throw them on the grill till they are cooked through or at least browned a bit if already precooked. Otherwise, you can slice them along with the veggies during prep work and pan sauté them with a bit of oil or butter.



Once the sausages are cooked or warmed through, set them aside to cool a bit before slicing. If you sauteed your sausages, simply remove them from the pan to a separate container so we can reuse the same pan to cook our veggies. Add a tablespoon or two of olive oil to the pan over Medium to Medium-High heat before adding the diced bell peppers. Season them with a bit of salt/pepper and let them begin to sweat off as they sauté for about 3 minutes.



Next, add the diced onion and continue sauteing the veggies for 2 additional minutes.



Finally, toss in the finely diced jalapenos for a final minute of cooking. When done, simply move the pan from the hot stove to begin cooling just a bit.



Once the veggies have been sauteed, combine the eggs and heavy cream in a large bowl and whisk together until homogenous. Finish off the mixture with a bit of your favorite hot sauce and stir it in well.



Preheat your oven to 350 degrees Fahrenheit. Coat a large 9x13 baking pan with some cooking spray and toss in the sausages. Be sure to mix the different sausage slices well, but spread them out evenly across the bottom of the entire pan.



Top the sausages with the pan of sauteed veggies. Again, spread them evenly across all the sausage slices.



Finally, pour the egg mixture over the sausages and veggies and allow to settle throughout the baking pan. You don't even need to stir anything as everything should layer itself automatically.



Once your oven is fully preheated, carefully transfer the full baking pan to the oven and bake, uncovered, for 40 minutes total. It isn't fully necessary, but I rotated mine 180 degrees in the oven after 20 minutes just to ensure more even cooking across the entire baking pan. Once cooked, remove the casserole form the oven and allow to cool before slicing. It will still be fairly thin and full of liquid straight out of the oven so I suggest covering and refrigerating before slicing if preparing this as meal prep. Otherwise, allowing it to cool for 15 minutes or so will work, but expect the middle to be a little runny due to the natural water in the veggies cooking out during the baking process.



Once cooled, slice this Triple Sausage Breakfast Bake into 8 equal portions for meal prep or just dig in and enjoy. Enjoy it as is to keep things low carb and KETO-friendly or serve it with some bread if you are not carb conscious.



Like I said earlier, it may be a bit runny till it fully sets up or cools so don't worry about it being undercooked. It just takes time for that extra liquid that seeps from the veggies during the baking process to disperse and solidify. Otherwise, this Triple Sausage Breakfast Bake is a meal preppers dream for its ease of cooking, nutritional values, and flavor even when reheated! You can easily swap out the sausages and veggies to change up flavor profiles or cater to specific dietary restrictions if necessary.
