In a small mixing bowl, combine the garlic, lemongrass paste, hoisin sauce, soy sauce, fish sauce, brown sugar, and sriracha. Mix well and set aside for now.

Heat a large pan over Medium-High heat and add the cooking oil. Once hot, add the ground pork and sauté for 7-8 minutes.

When a majority of the ground pork turns brown, add the sauce we made earlier and continue to cook on medium-High for an additional 8-10 minutes.

After a majority of the sauce cooks down and begins to caramelize, add some thinly sliced Thai chilies and continue to cook for an additional 1-2 minutes.

After about 18-20 minutes total cooking time, all of the liquids should have cooked out and the pork should be completely cooked through.

Depending on how you plan to serve your Vietnamese Lemongrass Pork, that pretty much wraps up the cooking process. You can serve it over rice with fresh herbs and cucumber slices as a rice bowl or use fresh lettuce leaves instead for lettuce wraps.

This pork is highly versatile in terms of meal prep and/or dinner and can easily be customized to individual tastes. You could easily add onion and other fresh vegetables to make it more filling and the chilies can be omitted if you aren't a huge fan of spice. Additional sriracha can be added by the individual according to their own taste. No matter how you serve or alter this Vietnamese Lemongrass Pork recipe, it is full of umami flavor and ready within 20 minutes making it an easy choice for a midweek dinner or full on weekly meal prep. Don't be afraid to change things up and personalize it to your own taste....Just Keep Cooking!
