Create the marinade for the chicken and potatoes by combining the za'atar spice blend in a bowl with olive oil, lemon juice, and some salt. Set aside about a 1/3 cup of the marinade for the potatoes while the rest will be used for the chicken thighs.



Begin by pouring the main portion of the za'atar marinade over the skin-on, bone-in chicken thighs. Toss to ensure they are coated on all sides and let marinate for 30 minutes.



While the chicken marinates, preheat the oven to 425 degrees Fahrenheit. You can also go ahead and pour the remaining 1/4 cup of marinade over the potatoes. Be sure to give them a good toss for full coverage. Besides potatoes, you can also pair your chicken with hearty veggies like bell peppers, zucchini, or red onions.



Transfer the chicken onto the sheet pan skin side up. Arrange the potatoes around the chicken in a single layer for best roasting results. I forgot to take a picture with the potatoes added, but it isn't exactly rocket science, eh?



Slide the sheet pan into the preheated oven and bake for 30 to 40 minutes. The internal temperature of the chicken should reach between 165-175 degrees and the potatoes should be browned and crispy on the outside.
